Omakase

Chef Vaidas Užgerys has felt his passion for food since childhood, helping his mother prepare simple homemade dishes. When entering the professional kitchen, Asian flavors and self-improvement as a sushi chef were chosen.

Over time, the desire to improve only grew, and when he received an offer to work in Norway, he took advantage of it. 7 years of working in Scandinavia and the knowledge gained from Michelin chefs such as Roger Asakil Joya and Vladimir Pak strengthened his knowledge and desire to prepare omakase-style dinners.

Chef Vaidas was accredited by Sensei Masayoshi Kazato, founder of AJSA (All Japan Sushi Association) in 2016. In the same year, he gained experience by participating in the World Sushi Championship in Tokyo, becoming the first Lithuanian to compete in an event of this level. In 2019, Vaidas chose to return to his home country and became the head chef of Sushi Masters Vilnius.

In 2022, the Omakase by Vaidas Užgerys tasting dinners were launched, accommodating up to 12 people. The word omakase means “leave everything in the chef’s hands”, so the guest only finds out what will be served during the dinner upon arrival. The 15-course omakase dinner consists of appetizers, sashimi and nigiri. The best quality local and internationally sourced products are used. The dishes are prepared using expressive fusion-style flavors and traditional Japanese methods.
